Simple Sweet Potato Mash

Why it works

Sweet potatoes are highly nutrient-dense, with just one medium-sized orange sweet potato easily delivering enough beta carotene to create 100% to 400% of the daily recommended intake of vitamin A for an adult. Your body takes the beta-carotene from sweet potatoes and converts it into active Vitamin A as needed. They are also very high in vitamin C, vitamin B6, potassium, manganese, and both soluble and insoluble fiber.

Ingredients

2 large sweet potatoes, peeled and cubed

1 tbsp olive oil (OK to leave out, will not affect the recipe significantly)

1 tbsp maple syrup

1/2 tsp cinnamon

Pinch of salt

Instructions

Boil sweet potatoes until soft; drain. Mash with olive oil, maple syrup, cinnamon, and salt. Serve warm.
