Quick & Easy Black Bean Chili

Why it works

This is a filling meal of easy-to-keep-on-hand ingredients that will protect your budget and health at those times when you’re uncomfortably close to hitting the “easy” button and ordering takeout.

I’ve given a basic recipe template that you can enhance by adding flavors of your choice - chipotle in adobo, lime juice, BBQ sauce, different beans, etc.

Black beans are full of protein, fiber and antioxidants. Corn is a great source of lutein and zeaxanthin for eye health. Canned tomatoes are high in lycopene, which fights cell damage.

Ingredients

1 can black beans, drained

1 cup canned diced tomatoes, undrained

1/2 cup frozen corn

1/2 cup diced onion

1 tbsp olive oil

1 tsp chili powder

1/2 tsp smoked paprika

Salt + pepper

Instructions

Sauté onion in olive oil until soft. Add beans, tomatoes, corn, chili powder, paprika, salt, and pepper. Simmer for at least 10 minutes, longer if you have time to let the flavors mingle. Serve hot - goes great with cornbread or crushed tortilla chips.
