Rosemary‑Garlic Holiday (or anytime) Potatoes

Why it works

Potatoes provide potassium and satiety, a reasonable amount of olive oil adds richness without clogging the heck out of anyone’s arteries, and rosemary + garlic bring the classic savory flavor that everyone expects at the holiday table.

Ingredients

  • 4 large potatoes, cubed

  • 2 tbsp olive oil

  • 1 tsp rosemary

  • 1 tsp garlic powder

  • Salt + pepper to taste

Instructions

  1. Preheat oven to 400°F.

  2. Toss potatoes with olive oil, rosemary, garlic powder, salt, and pepper.

  3. Roast 25–30 minutes.

  4. Serve warm.
