Cranberry‑Walnut Quinoa

Quinoa provides complete protein, cranberries load up on the antioxidants, and walnuts add omega‑3. A colorful side that supports good health and feels indulgent without taking too much effort.

If you’re bringing this dish to a get-together and want to go the extra mile, chopped herbs such as green onions or basil add flavor and look great sprinkled over the top.

Ingredients

  • 2 cups cooked quinoa

  • 1 cup fresh or frozen cranberries (dried cranberries are a nice substitute, but will change the nutrition)

  • 1/4 cup chopped walnuts

  • 2 tbsp maple syrup

  • 1 tbsp olive oil (can be omitted with no major impact to flavor)

  • 1/2 tsp cinnamon

  • Salt and pepper to taste

Instructions

  1. Warm quinoa in a skillet.

  2. Add cranberries, maple syrup, olive oil, cinnamon, and salt.

  3. Cook 3–4 minutes until cranberries soften.

  4. Stir in walnuts.

  5. Serve warm.
