Beet Dip That Actually Tastes Good

Why it works

Have you noticed tubs of beet powder in the Supplement section of big box stores? Beets contain high levels of inorganic nitrates that the body converts into nitric oxide, which helps relax and widen blood vessels. This contributes to lowering blood pressure and improving exercise performance, hence the market for supplements.

Despite the significant health benefits, many people can’t get past the ‘earthy’ flavor of beets. This garlicky dip is a great way for beet-haters to get the benefits of this unique root vegetable while enjoying something tasty. No need to choke down powdered beet smoothies. If you’d prefer to start with a lower dose of beets in this recipe - use 2 cans of beans, rather than 1, for a milder flavor and color.

I typically serve this on 100% whole wheat toast for an easy breakfast, but it’s also great with crackers or veggie sticks. The bright red color makes it look impressive on an appetizer platter.

Ingredients

1 can of white beans (Cannellini, Great Northern, etc.)

3 cloves of garlic

2T of freshly squeezed lemon juice

1 or more medium beets - raw peeled, canned, or packaged

Salt & pepper to preference

Instructions

Drop the peeled garlic cloves into a food processor to chop.

Add the beets, and whir the garlic and beets together until no large chunks of beet remain.

Drain the beans, add the lemon juice, and puree everything together.

Add salt, pepper and any other seasonings you’d like.
