Carrot‑Ginger Tofu Spread

Why it Works

This spread is high-protein, spicy, creamy, and ridiculously easy. It’s one of those staples you can make in five minutes and use all week — on sandwiches, wraps, bowls, or as a dip for raw veggies. The carrot adds natural sweetness and crunch, while powdered ginger gives you warmth and spice without the fuss of fresh ginger.

Nutritional yeast is used to add a more complex flavor, with the bonus of being very high in vitamin B12. If you don’t have any around, not to worry - just add another squirt of sriracha or some more soy sauce and you won’t miss it.

Tofu is an incredibly nutritious food; most people don’t know what to do with it, so here’s an idea:

Ingredients

1 block (14 oz) firm or extra‑firm tofu, drained

1 carrot, finely grated or minced (it’s easiest to use the food processor for this)

2 tbsp chopped green onion

Juice of 1 lemon

1 tbsp soy sauce

1 tbsp rice vinegar

1 tbsp maple syrup

2 tsp sriracha

1 tbsp nutritional yeast

1 tsp garlic powder

1 tsp onion powder

½–1 tsp powdered ginger (adjust for spice)

½ tsp salt (adjust to taste)

Black pepper to taste

Optional: 1 tbsp tahini for extra creaminess (adds a healthy form of fat)

Instructions

Add all of the ingredients, other than green onion, to the food processor. Blend until smooth and creamy. Fold in the green onion. Sample, and adjust seasoning based on individual taste and natural variations in ingredients. Chill for 30 minutes to let the flavors settle and intensify.

How to Use It

This is pretty awesome on flax crackers, in Asian-inspired bowls with edamame and rice (quick meal prep), or rolled up in Nori sheets with julienned veggies. Keeps 4–5 days in the fridge and gets better as it sits. The servings are calculated based on appetizer portions - if this is your main protein in a meal, please have at least 2 servings.
