Lemon‑Herb Lentil Salad (25g Protein per Serving)

Ingredients

  • 2 cups cooked green or brown lentils

  • 1 cup cherry tomatoes, halved

  • 1/2 cup diced red onion

  • 1/4 cup chopped fresh parsley

  • 2 tbsp olive oil

  • Juice of 1 lemon

  • 1 tbsp balsamic vinegar

  • Salt + pepper to taste

Instructions

  1. Combine lentils, crunchy veggie, tomatoes, and onion in a large bowl.

  2. Whisk olive oil, lemon juice, balsamic vinegar, salt, and pepper.

  3. Pour dressing over salad and toss gently.

  4. Add fresh herbs and adjust seasoning.

  5. Serve chilled or at room temperature.
