Simple Energy Balls

Why It Works

Both children and adults love energy balls; they’re a grab-and-go snack that satisfy a sweet craving while providing the fiber, protein and minerals our bodies need. Make a big batch on Sunday and have healthy snacks for the entire week. I’ve provided a basic recipe template that you can modify as desired - feel free replace up to a cup of the oats with protein powder, coconut, chocolate chips or other dry ingredients. You can even use quick oats, rather than rolled oats, if that’s what you have around. Depending on the texture of your nut butter, you may need to add a little more or less of the oats to make the balls rollable without sticking to your hands too much.

INGREDIENTS (MAKES 24 BALLS)

  • 3 cups rolled oats

  • 2 cup peanut butter (or any kind of nut butter)

  • 6 tbsp maple syrup or agave syrup

INSTRUCTIONS

  1. In a large mixing bowl, combine all ingredients. The texture should be similar to clay; if not, adjust by adding wet or dry ingredients a little at a time.

  2. Compress and form into small balls with your hands and place in a storage container in the fridge.
