High Protein Anytime Pancake

Why it Works

Made of egg whites and oats and topped with frozen berries, this pancake is quick, easy, economical, and gets you 30 g of protein from real food. The simple ingredients are items that can be kept on hand and used when you need them - by the way, did you know that egg whites can be kept in the freezer?

Ingredients

1 cup egg whites

1/3 cup quick oats

Salt to taste

1 cup of frozen berries, thawed

2 tsp coconut sugar (or sweetener of choice)

Instructions

Mix the egg whites and oats. Let them sit for a few minutes (or overnight) to soften. Meanwhile, thaw the berries and stir the coconut sugar into them. Bake the egg white oatmeal mix in a small frying pan or crepe pan over medium-low heat until set. Flip and cook for another minute. If you’re avoiding both nonstick pans and oil, you will have the best chance of success using a low temp and cooking for an extended (very extended) time - do not try to remove or flip the pancake until it’s crispy on the bottom and lifts easily. Serve with the berries on top.

How to Use It

When you just can’t stomach another protein shake, this is a satisfying alternative. You can easily omit the berries and pile on veggies and hot sauce for a savory version.
